Potato salad with Real Smoked Tofu and a herb and mustard vinaigrette

A tasty potato salad with hearty smoked tofu and a fresh herb and mustard vinaigrette



1.5 kg potatoes
300ml strong vegetable broth
1 small bunch fresh parsley
2 onions
125 g Viana Real Smoked Tofu
1 tbsp. agave syrup or sugar
1 heaped tsp. mustard
salt, white pepper to taste
2 tbsp. olive oil



Cook the potatoes in salt water for about 35 minutes. Let them cool and slice them. Peel and finely dice the onions. Dice the Real Smoked Tofu.  Rinse and chop the parsley. Heat the olive oil in a frying pan and fry the diced Real Smoked Tofu until crisp. Add the diced onions and fry for three more minutes. Add the vegetable stock, mustard, agave syrup and chopped parsley, stir fry briefly and season with salt and pepper.  Add to the potatoes, stir and let the potato salad steep for half an hour.

 

By the way, you can combine this recipe with Veggiefresh sausage and vegetable shish kebabs, and crêpes in orange sauce with chocolate mousse to make a wonderful two course meal for 2 – 3 persons!
