Crêpes with Soya Alive drink in orange sauce, served with Soyatoo! chocolate mousse
Fine crêpes with fresh orange wedges, orange sauce and seductive chocolate mousse.

| 100g | dark chocolate (50% cocoa) |
| ¾ pack | Soy Whip Topping |

Orange sauce |
| 250 ml | orange juice |
| 3 | oranges |
| 2 tbsp. | icing sugar |
| 1 heaped tsp. | starch |
| 1 pinch | cinnamon |

Soya Alive Crêpes (enough for 2 - 3 crêpes) |
| 100 g | flour |
| 1 tbsp. | icing sugar |
| 160 ml | Soya Alive Drink in Demeter quality |
| 1 pinch | salt |

Chocolate mousse:
Heat the chocolate in a water bath, and then allow to cool for 10 minutes. Mix the liquid chocolate bit by bit with the Soyatoo! Soy Whip. Refrigerate.
Orange sauce:
Peel and cut the three oranges into wedges. Mix the starch with 100ml orange juice. Bring the rest of the orange juice to the boil with icing sugar and cinnamon in a small saucepan. Add the dissolved starch, stir in and bring to the boil again.
Crêpes:
Mix all the ingredients in a large bowl with a whisk, out aside for 10 minutes. Brush a non-stick frying pan with a little oil and fry the crêpes from each side for 2 minutes. Finally melt 50g dark chocolate in a water bath.
Fold the crêpes twice, place in the sauce, then lay on plates. Place the orange wedges on top, shape the chocolate mousse with two tablespoons place next to the crêpes and decorate with the melted chocolate.
