Hot Thai curry
A fast, easy, tasty Rice dish.

Ingredients for 4 dishes
| 250 g | Viana Tofu |
| 6 | capsicum |
| olive oil | |
| 100 g | rice |
| 5 | potatoes |
| 20 | sweet peas |
| 150 g | asparagus |
| 100 g | leek |
| 300 ml | coconut milk |
| curry paste |

1. Dice the Tofu and put in a lightly greased covered pan on medium heat. Strew with salt and turn up the heat. After a few minutes add curry powder to taste and fry until crisp, turning over frequently. Set the tofu aside in a dish.
2. Cook the rice according to directions on the package.
3. Finely slice the potatoes and capsicum, fry in hot oil in a wok or a large pan. Pour in the coconut milk and the vegetable stock. Simmer for 10 minutes.
4. Add the sweet peas, leek and asparagus. Cook for another 5 minutes. Mix in the prepared diced tofu and serve at once.
