Aromatically spiced potatoes

New potatoes - with a difference



Ingredients for 4 dishes
500 g new season’s potatoes
250 g Viana Tofu
2 bunch of chives
1 tbsp ground coriander
1 tsp turmeric
2 tbsp lemon juice
1 coriander leaves
oil
salt



1. First cook the potatoes for 10 to 15 minutes until soft. Drain the potatoes.

2. Cook the rice according to the directions on the package.

3. Heat some oil in a wok and add the potatoes as well as the mustard seeds. Stir fry for 5 minutes.

4. Now sprinkle with chilli powder, ground coriander and turmeric. Mix in salt and the coriander leaves. Fry on low heat a few more minutes. Sprinkle with lemon juice and serve.
